Fried eggplants with tomato sauce (melidzanes tyganites me salca)

About 8 servings:

– 1 kg eggplant
– 1 cup of flour
– salt pepper
– oil for frying
– 5-6 garlic cloves
– onion
– tomato sauce
– sugar

Cut the washed eggplants into longitudinal slices. They should be soaked in cold water for 2 minutes. Then lightly dry them. We combine flour with salt and pepper. We wrap eggplants in flour and fry in hot oil. After putting them on a platter, pour them sauce on top. You can eat hot and cold.

Preparation of the sauce:

In the pan in olive oil, we brown the onion. We add 5 or 6 cloves of garlic cut into rings. Then add tomato sauce, salt, pepper, a pinch of sugar. You can also add parsley. We boil.
