– 1 kg eggplant
– 1 cup of flour
– salt pepper
– oil for frying
Cut the washed eggplants into longitudinal slices. They should be soaked in cold water for 2 minutes. Then lightly dry them. We combine flour with salt and pepper. We wrap eggplants in flour and fry in hot oil. We serve immediately. They can be sprinkled with grated cheese (Parmesan cheese or yellow cheese).
Curiosity:
In Greece there are two types of eggplants (photo below). Longitudinal eggplants with white stripes should be soaked in cold water for a while to get rid of bitterness.
